This isn't really a 100 Words post, but I don't have time to share this recipe and write another 100 words and work on everything else I need to and get to bed on time. So this will have to suffice.
I was inspired by this recipe from Betty Crocker, but altered it significantly. All measurements are approximate. I didn't use any measuring cups.
Cook 1 1/2 cup orzo according to the box. Drain and cool.
While orzo is cooking mix:
1 avacado
1 tomato
1 cup cooked and chopped chicken
3/4 cup sour cream
8 slices of cooked bacon, crumbled
1/2 packet powered ranch dressing mix
Stir in cooled orzo and 2 cups ripped up lettuce.
Either serve immediately, or chill for later. Feeds Thomas, Eamon, and I with a lunch portion leftover.
